I don't have a Dimension 2100 but I have run it on many, many older Dimensions with no trouble (in fact I still have a couple really old ones running downstairs, one being my firewall).
What really matters is what actual hardware that is in it. Do you have a list of everything you have in it (get some make/models from your Device Manager on network card, modem, printer, etc, etc). List any peripherals you need to get working and how they are connected. I would speculate that overall Linux should run just as good on it as any other machine. You may have a device or two that it doesn't like if it's Windows specific (winmodem, winprinter, etc). One way to find out, install it and see, it wouldn't cost you anything. I would dual boot it at first until you are sure everything works like you want, then you can blow away your Windows partition (or just clean it up, shrink it down, and keep it there in a dormant state if you ever wanted to test something in the future on it).
